The ingredients needed to make Black Rice Cake:

  1. Use 1 cup of Black Rice.
  2. Get 1/2 cup of Whole wheat flour.
  3. You need 3/4 cup of Sugar.
  4. Get 1 tbsp of Vinegar.
  5. Take 1/2 tsp of Baking soda.
  6. You need 1 tsp of Baking powder.
  7. Take 1/2 cup of + 2 tbsp warm milk.
  8. Provide 1/2 cup of Canola oil or any unflavored oil.
  9. Prepare 1/8 tsp of Cardamom powder.
  10. Prepare 2-3 tbsp of pistachios, almond and cashewnut chopped.
  11. You need as needed of Powdered sugar for dusting (optional).

Steps to make Black Rice Cake:

  1. Soak the rice for 3-4 hours or overnight. Drain it and sun dry it, not necessary to dry them completely. Grind them into a fine powder..
  2. In a mixing bowl add the black rice flour, whole wheat flour, baking powder, cardamom powder..
  3. Mix well and incorporate them nicely..
  4. In a mixing bowl add the vinegar, baking soda, mix well and let it stand for 5 mins. Add sugar, milk, oil and mix..
  5. Add the wet ingredients to the dry ingredients and gently fold it to make a smooth batter..
  6. Preheat oven @180 for 10 mins. Grease a cake pan with oil and keep aside. Pour the batter into the greased pan and tap the pan for 2-3 times..
  7. Sprinkle the chopped nuts over it..
  8. Bake the cake for 35 mins. Start checking from 30 mins onwards. A tooth pick inserted should come out clean..
  9. Remove from oven and let it stand for about 5 mins..
  10. Demould, cut and serve..
