  2. Take 1 cup of chopped onion.
  3. Take 1.5 cups of sliced peppers.

  5. Get 1 of heaped tsp ground coriander.
  6. Get 1 of heaped tsp cumin.
  7. Use 1 tsp of oregano.
  8. You need cube of Kallo veg stock.
  9. Provide 2 tbsp of tomato paste.
  10. Provide 390 g of chopped tomatoes (I use cartons over cans).
  11. Prepare 1 can of red kidney beans (drained and rinsed).
  12. Prepare 1 can of black eye beans (drained and rinsed).
  13. Use 1/2 tsp of chipotle paste.
  14. You need of Salt and pepper.
  15. Get of Extras - to serve.
  16. You need of Tortilla wraps.
  17. Take of Nachos.
  18. Take of Guacamole.
  19. You need of Veganaise.
  20. Take of Jalapenos.
  21. Use of Rice.

Instructions to make Vegan Chilli (sin carne!):

  1. Fry your meat free mince according to packet and set aside.
  2. Fry onions, peppers and garlic until liquid is released and evaporated.
  3. Add coriander, cumin and oregano to the pan, crumble in stock cube, and cook for a minute.
  4. Add mince back to pan and stir until it is all incorporated.
  5. Add tomatoes and tomato paste to the meat and veg mixture, then add cold water to the empty carton (I used around half a carton) to get all the tomato-y goodness out!.
  6. Bring back to a simmer before adding the beans and the chipotle paste.
  7. Bring back to a simmer and add salt and pepper to taste.
  8. Simmer for about 10 minutes.
  9. Serve with your favourite accompaniments! We made wraps out of ours with veganaise, my easy guacamole, shredded violife cheese and crumbled nachos.
